For omelet rice, you usually put mixed vegetables, chicken, and ketchup into the rice before covering it with the egg. Croquettes have potatoes and a little meat on the inside, and then you bread and deep fry the outside so it's crunchy. And for tempura, you can batter and deep fry just about anything. I was thinking vegetables, but stir fry is even easier.
